Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 tablespoons ice water
  • 8 ounces dark chocolate, finely chopped
  • 1/4 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Tart Shells: In a mixing bowl, combine flour and butter until crumbly. Slowly mix in sugar and a pinch of salt, then add ice water until it forms a dough. Roll it out and cut it into small circles to fit your tart tins. Chill them in the fridge for about 30 minutes while preheating the oven to 350°F (175°C).
  2. Blind Bake the Shells: Place parchment paper over the crust and fill them with pie weights or dried beans. Bake for about 15 minutes until they are lightly golden. Remove from the oven; let them cool slightly before taking off the weights.
  3. Make the Chocolate Filling: In a heatproof bowl, melt chocolate and butter together over simmering water or in the microwave. Once melted, remove from heat and stir in sugar, heavy cream, eggs, and vanilla extract. Mix until you get a smooth consistency.
  4. Fill the Tart Shells: Pour the chocolate mixture into the cooled tart shells, filling them almost to the top.
  5. Bake Again: Return the tarts to the oven and bake for about 10-12 minutes, or until just set. They will keep cooking while they cool, so avoid overbaking!
  6. Cool and Serve: Allow the tarts to cool at room temperature, then refrigerate for at least two hours before serving.

Notes

For a lighter version, use coconut cream instead of heavy cream, and opt for dairy-free chocolate. Enjoy with toppings like fresh berries or a sprinkle of sea salt.
