Description

A delicious and comforting dish featuring savory meatballs in a rich, creamy sauce, blended with earthy mushrooms and served over noodles.


Ingredients

  • 1 lb Ground Beef (or turkey)
  • 1 cup Breadcrumbs
  • 1 Egg
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 8 oz Mushrooms, sliced
  • 1 cup Beef broth (or vegetable broth)
  • 1 cup Sour cream (or Greek yogurt)
  • 2 tbsp Worcestershire sauce
  • 12 oz Egg noodles (or pasta of choice)
  • Salt and pepper to taste
  • 1 tbsp Oil for cooking

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, egg, onions, garlic, and some salt and pepper. Mix gently.
  2. Using your hands, roll the mixture into bite-sized meatballs.
  3. In a large skillet, heat oil over medium heat. Add the meatballs in batches, searing until golden brown on all sides, then transfer to a plate.
  4. In the same skillet, add more oil if needed, and sauté the onions until translucent. Add the mushrooms and cook until tender.
  5. Sprinkle flour over the veggies, stir for a minute, then gradually pour in the beef broth and Worcestershire sauce and let it simmer until thickened.
  6. Return meatballs to the skillet and cook through until coated in the sauce.
  7. Turn off heat and stir in the sour cream until the sauce is velvety; taste and adjust seasoning.
  8. Serve over noodles and garnish with fresh herbs.

Notes

If the sauce is too thick, add a splash more broth for desired consistency.
