Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- Cream the unsalted butter and sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, until just combined.
- Fill each cupcake liner about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
- Frost and decorate as desired.
Notes
For a vegan option, substitute unsalted butter with non-dairy butter and eggs with flaxseed meal mixed with water.
