Description

Ingredients

  • Romaine lettuce or kale
  • Crisp cucumbers
  • Vibrant bell peppers
  • Shredded carrots
  • Radishes
  • Fresh parsley or cilantro
  • Chickpeas, grilled chicken, or tofu
  • Olive oil
  • Lemon juice
  • Minced garlic
  • Salt and pepper to taste
  • Croutons or nuts

Instructions

  1. Wash and dry the greens, then tear them into bite-sized pieces and place in a large salad bowl.
  2. Dice the cucumbers and bell peppers, shred the carrots, and slice the radishes thinly; toss them into the bowl.
  3. Roughly chop the herbs and add them to the mix. If using protein, fold it in gently.
