- 4 Yukon Gold or Russet potatoes, peeled and diced
- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream (or non-dairy alternative)
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Prep your ingredients: Peel and dice the potatoes and chop the onions and garlic.
- Sauté the aromatics: In a large pot, melt butter over medium heat. Add onions and sauté until translucent, about 5 minutes. Stir in minced garlic and cook until fragrant, about 1-2 minutes.
- Cook the potatoes: Add diced potatoes and vegetable broth to the pot. Bring to a gentle boil, then reduce heat and let simmer until potatoes are tender, around 15-20 minutes.
- Blend the mixture: Use an immersion blender to purée the soup until smooth. Alternatively, transfer to a traditional blender, blend in batches, and return to pot.
- Add cream and herbs: Pour in heavy cream, stir well, and add chopped herbs, salt, and pepper to taste. Heat through without boiling.
- Taste and adjust: Taste the soup and adjust seasoning if needed.
- Serve: Ladle into bowls and garnish with a drizzle of cream and fresh herbs.
Notes
For a lighter version, substitute heavy cream with half-and-half or a non-dairy alternative. Add crispy bacon bits or blue cheese for extra flavor.
