- 24 ladyfingers (savoiardi)
- 2 cups mascarpone cheese
- 4 eggs, separated
- 1/2 cup sugar

Instructions
- Prepare Your Ingredients: Brew espresso and let it cool.
- Make the Coffee Mixture: Combine brewed coffee with 1 tbsp sugar until dissolved.
- Whip the Egg Mixture: Beat egg yolks with sugar until pale and thick.
- Incorporate Mascarpone: Gently fold mascarpone into the egg mixture.
- Whip Egg Whites: In another bowl, whip egg whites until stiff peaks form and fold into the mascarpone mixture.
- Assemble the Layers: Dip ladyfingers in coffee and layer in a serving dish with half of the mascarpone mixture.
- Repeat: Layer more dipped ladyfingers and the remaining mascarpone mixture.
- Chill: Cover and refrigerate for at least 4 hours, preferably overnight.
- Serve: Dust with cocoa powder before serving.
