  • 24 ladyfingers (savoiardi)
  • 2 cups mascarpone cheese
  • 4 eggs, separated
  • 1/2 cup sugar
  • Cocoa powder, for dusting

Instructions

  1. Prepare Your Ingredients: Brew espresso and let it cool.
  2. Make the Coffee Mixture: Combine brewed coffee with 1 tbsp sugar until dissolved.
  3. Whip the Egg Mixture: Beat egg yolks with sugar until pale and thick.
  4. Incorporate Mascarpone: Gently fold mascarpone into the egg mixture.
  5. Whip Egg Whites: In another bowl, whip egg whites until stiff peaks form and fold into the mascarpone mixture.
  6. Assemble the Layers: Dip ladyfingers in coffee and layer in a serving dish with half of the mascarpone mixture.
  7. Repeat: Layer more dipped ladyfingers and the remaining mascarpone mixture.
  8. Chill: Cover and refrigerate for at least 4 hours, preferably overnight.
  9. Serve: Dust with cocoa powder before serving.

Notes

Be cautious with the coffee soaking to avoid mushy ladyfingers. Letting it chill overnight enhances the flavors.
