Description
Delightful cookies infused with the refreshing flavors of citrus and Earl Grey tea, topped with caramelized white chocolate for an irresistible treat.
Ingredients
Scale
- 1 cup Unsalted Butter, room temperature
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 2 1/2 cups All-Purpose Flour
- 2 bags Earl Grey Tea (or 2 tablespoons loose leaf)
- Zest of 1 Lemon or Orange
- 1 cup Caramelized White Chocolate
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Salt
Instructions
- Preheat the oven to 350°F (175°C).
- Chop white chocolate and spread on a parchment-lined baking sheet. Bake for about 15 minutes, stirring every 5 minutes until melted and golden. Set aside to cool.
- Cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add eggs and vanilla, mixing until fully incorporated.
- Steep Earl Grey tea in a small amount of hot water. Strain and mix the infused tea into the butter-sugar mixture.
- Fold in the citrus zest. In another bowl, whisk together flour and salt, then gradually add to the wet mixture until just combined.
- Fold in cooled caramelized white chocolate.
- Scoop dough onto parchment-lined baking sheets, allowing space for spreading.
- Bake for 10-12 minutes until edges are golden. Cool on baking sheet before transferring to wire rack.
Notes
For best results, do not overmix the dough. Allow caramelized chocolate to cool before adding to prevent gooeyness. Store in an airtight container for up to a week.
