Description

Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 lb pappardelle pasta
  • 1 can (28 oz) crushed tomatoes
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup red wine
  • 1/2 cup milk or cream
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prepare your ingredients by dicing the onion, garlic, carrot, and celery.
  2. In a heavy skillet over medium heat, add olive oil and sauté the onions, carrots, and celery until softened, about 5-7 minutes. Add minced garlic towards the end.
  3. Increase the heat, add the ground meat, and break it up. Season with salt and pepper as it browns.
  4. Pour in the red wine, stirring to deglaze. Let it simmer a few minutes until reduced.
  5. Stir in crushed tomatoes, dried herbs, and bay leaf. Bring to a gentle simmer and let it cook uncovered for 1-2 hours.
  6. About 10-15 minutes before serving, add the milk or cream and let it bubble.
  7. Cook the pappardelle according to package instructions in salted boiling water until al dente.
  8. Drain the pasta and toss it with the sauce. Serve hot, garnished with fresh basil or parsley and Parmesan cheese.

Notes

For a vegetarian version, replace the meat with lentils or mushrooms. Adjust the simmering time for deeper flavors.
