- 1 lb ground beef
- 1 lb ground pork
- 1 lb pappardelle pasta
- 1 can (28 oz) crushed tomatoes
- 1 onion, diced
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup red wine
- 1/2 cup milk or cream
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 2 tsp dried oregano
- 1 bay leaf
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Prepare your ingredients by dicing the onion, garlic, carrot, and celery.
- In a heavy skillet over medium heat, add olive oil and sauté the onions, carrots, and celery until softened, about 5-7 minutes. Add minced garlic towards the end.
- Increase the heat, add the ground meat, and break it up. Season with salt and pepper as it browns.
- Pour in the red wine, stirring to deglaze. Let it simmer a few minutes until reduced.
- Stir in crushed tomatoes, dried herbs, and bay leaf. Bring to a gentle simmer and let it cook uncovered for 1-2 hours.
- About 10-15 minutes before serving, add the milk or cream and let it bubble.
- Cook the pappardelle according to package instructions in salted boiling water until al dente.
- Drain the pasta and toss it with the sauce. Serve hot, garnished with fresh basil or parsley and Parmesan cheese.
Notes
For a vegetarian version, replace the meat with lentils or mushrooms. Adjust the simmering time for deeper flavors.
