  • 23 medium sweet potatoes, peeled and diced
  • 1 cup dried cranberries
  • 1/2 cup crumbled goat cheese
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Fresh herbs (thyme or parsley) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the diced sweet potatoes with a drizzle of olive oil, salt, and pepper, then spread on the baking sheet.
  3. Roast for 25-30 minutes until tender and golden, flipping halfway through.
  4. While sweet potatoes roast, prepare the dressing by mixing olive oil, apple cider vinegar, salt, and pepper in a bowl.
  5. Once the sweet potatoes cool slightly, combine them with cranberries and goat cheese in a large bowl.
  6. Drizzle with the dressing and toss to combine.
