- 200g halloumi cheese, sliced
- 4 flour or whole wheat tortillas
- 100ml sweet chili sauce
- 1 bell pepper, sliced
- 1 cucumber, sliced
- Fresh lettuce or greens
- 1 tablespoon olive oil
- Fresh cilantro or mint for garnish
Instructions
- Slice the halloumi into thick pieces, about half an inch thick.
- Heat a skillet over medium-high heat and add olive oil.
- Grill the halloumi slices for 2-3 minutes on each side until golden brown.
- Prepare your vegetables by slicing the bell peppers and cucumbers into bite-sized pieces.
- Remove the halloumi from the skillet and let it cool briefly. Warm the tortillas in the microwave or on a dry skillet.
- Assemble the wraps: Lay a tortilla flat, add fresh veggies, grilled halloumi, and drizzle with sweet chili sauce.
- Roll the tortilla tightly, folding in the sides, and secure with a toothpick if desired.
- Serve immediately and enjoy!
Notes
For a twist, try using rice paper wraps or adding avocado and pickled onions.
