- 4 skinless, boneless chicken breasts
- 1 cup chopped mushrooms
- 1 cup fresh spinach
- 1/2 cup feta or cream cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (basil, parsley, or thyme)
Instructions
- Preheat oven to 375°F (190°C).
- Slice a pocket into the side of each chicken breast.
- In a skillet, heat olive oil over medium heat and sauté mushrooms and garlic until softened.
- Add spinach until wilted, then mix in cheese, herbs, salt, and pepper.
- Stuff each chicken breast with the filling, securing with toothpicks if necessary.
- Heat more olive oil in the skillet and sear each stuffed chicken breast for 3-4 minutes on both sides until golden brown.
- Transfer to the oven and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Let rest for a few minutes before removing toothpicks and slicing.
