- 1 lb Spanish chorizo, diced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 yellow onion, chopped
- 4 cloves garlic, minced
- 2 bell peppers (red or yellow), diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp smoked paprika
- 1 tsp cumin
- 2 bay leaves
- Salt and pepper, to taste
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- Prepare the Ingredients: Chop the chorizo, onion, bell peppers, and garlic.
- Sauté the Chorizo: In a large pot over medium heat, add the chorizo and cook until it starts to brown, about 5 minutes.
- Add Aromatics: Add the onion and bell pepper, stirring until softened, about 5 minutes. Then add the garlic and sauté for another minute.
- Introduce the Tomatoes: Pour in the diced tomatoes and let this simmer for about 10 minutes.
- Add Chickpeas and Spices: Stir in the chickpeas, smoked paprika, cumin, bay leaves, and broth. Bring to a gentle boil, then reduce heat and simmer for at least 30 minutes.
- Taste and Adjust: Taste the stew, adjust seasoning with salt, pepper, and squeeze lemon juice if desired.
- Serve: Serve hot, garnished with fresh herbs.
Notes
This stew can be adapted with lentils or seasonal vegetables if preferred. It’s great for meal prepping and freezes well for up to 3 months.
