Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper.
- Cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together all-purpose flour, baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the wet mixture, blending until just combined.
- Fold in a handful of chocolate chips for extra flavor (optional).
- Scoop the cookie dough onto the baking sheet, spacing them about two inches apart.
- Bake for 10-12 minutes until edges are golden and centers are slightly undercooked.
- Let them cool for a few minutes before transferring to a wire rack.
- Frost each cookie generously with chocolate frosting, sprinkle with graham cracker crumbs, and add mini marshmallows.
- For an extra touch, broil for 1 minute to toast the marshmallows slightly (watch closely!).
