S’mores Chocolate Chip Muffins

Description

Delicious muffins that combine chocolate, marshmallows, and graham crackers for a nostalgic treat reminiscent of campfire s’mores.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup milk (whole or buttermilk)
  • 1/2 cup melted butter
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup graham cracker crumbs

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together milk, melted butter, and eggs. Blend well before adding to dry ingredients.
  4. Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Fold in chocolate chips and marshmallows (reserve some for topping).
  6. Divide batter among muffin cups, filling each about three-quarters full. Sprinkle remaining chocolate chips and marshmallows on top.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Avoid overmixing the batter to keep muffins light and airy. Allow muffins to cool for proper structure.
