Delicious muffins that combine chocolate, marshmallows, and graham crackers for a nostalgic treat reminiscent of campfire s’mores.

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 cup milk (whole or buttermilk)
- 1/2 cup melted butter
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 1/2 cup graham cracker crumbs
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In another bowl, mix together milk, melted butter, and eggs. Blend well before adding to dry ingredients.
- Pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Fold in chocolate chips and marshmallows (reserve some for topping).
- Divide batter among muffin cups, filling each about three-quarters full. Sprinkle remaining chocolate chips and marshmallows on top.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Avoid overmixing the batter to keep muffins light and airy. Allow muffins to cool for proper structure.
