Instructions
- Prepare the Chicken: Season chicken with salt, pepper, cumin, and paprika. Smoke or grill until it reaches an internal temperature of 165°F (1-2 hours). Shred and set aside.
- Roast the Green Chiles: Roast fresh chiles over open flame until charred, cover to steam for 10 minutes, then peel and chop.
- Mix the Filling: Combine shredded chicken, roasted chiles, diced onion (optional), cilantro, and lime juice in a bowl. Stir in sour cream or avocado.
- Assemble the Burritos: Warm tortillas and fill with chicken mixture, sprinkle with cheese, fold in sides, and roll tightly.
- Heat and Serve: Sear burritos on a skillet seam-side down until golden brown (3-4 minutes per side). Serve hot with sour cream, avocado, or salsa.
Notes
Feel free to substitute chicken with pulled pork or tofu for a different twist. For low-carb, use lettuce wraps instead of tortillas.
