Description

A comforting and hearty Slow Cooker Cheesy Shepherd’s Pie featuring seasoned ground beef, fresh vegetables, and creamy, cheesy mashed potatoes.


Ingredients

  • 1 lb lean ground beef
  • 1 small yellow or white onion, diced
  • 2 large carrots, diced
  • 1 cup frozen peas
  • 1 cup beef broth
  • 4 cups mashed potatoes (fresh or store-bought)
  • 1 cup sharp or mild cheddar cheese, shredded
  • 1 tsp fresh thyme, or 1/2 tsp dried
  • 1 tsp fresh rosemary, or 1/2 tsp dried

Instructions

  1. In a skillet over medium heat, sauté the onions until translucent, then add the ground beef and cook until browned. Drain excess fat.
  2. Add the diced carrots, frozen peas, and herbs. Pour in the beef broth and let it simmer for about 10 minutes.
  3. Transfer the beef mixture to the slow cooker, spreading it evenly.
  4. If using fresh potatoes, peel, boil until fork-tender, then mash with butter, milk, and salt. Stir in shredded cheddar.
  5. Spread the cheesy mashed potatoes over the meat mixture in the slow cooker.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. Let cool slightly before serving.

Notes

For a vegetarian option, use lentils or textured vegetable protein instead of ground beef.
