- 1 lb lean ground beef
- 1 small yellow or white onion, diced
- 2 large carrots, diced
- 1 cup frozen peas
- 1 cup beef broth
- 4 cups mashed potatoes (fresh or store-bought)
- 1 cup sharp or mild cheddar cheese, shredded
- 1 tsp fresh thyme, or 1/2 tsp dried
- 1 tsp fresh rosemary, or 1/2 tsp dried
Instructions
- In a skillet over medium heat, sauté the onions until translucent, then add the ground beef and cook until browned. Drain excess fat.
- Add the diced carrots, frozen peas, and herbs. Pour in the beef broth and let it simmer for about 10 minutes.
- Transfer the beef mixture to the slow cooker, spreading it evenly.
- If using fresh potatoes, peel, boil until fork-tender, then mash with butter, milk, and salt. Stir in shredded cheddar.
- Spread the cheesy mashed potatoes over the meat mixture in the slow cooker.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Let cool slightly before serving.
Notes
For a vegetarian option, use lentils or textured vegetable protein instead of ground beef.
