Description
A nostalgic dish that combines juicy chicken meatballs flavored with ginger and garlic, served over a bed of fragrant rice and fresh vegetables.

- 1 lb ground chicken
- 2 tbsp sesame oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp low-sodium soy sauce
- 1 cup panko breadcrumbs
- 4 cups cooked jasmine or basmati rice
- 2 cups seasonal vegetables (e.g. broccoli, snap peas, bell peppers)
- Sesame seeds for garnish
- Chopped scallions for garnish
Instructions
- In a large bowl, combine ground chicken, minced garlic, grated ginger, soy sauce, sesame oil, and panko breadcrumbs. Mix until just incorporated.
- With wet hands, form the mixture into small meatballs, about the size of a golf ball.
- Heat a large skillet over medium heat, drizzle in sesame oil, and carefully add the meatballs. Sear for 5–7 minutes until golden brown on all sides.
- In a small bowl, whisk together soy sauce, honey or maple syrup, and a splash of water. Pour this over meatballs and simmer for an additional 5 minutes.
- Fluff the cooked rice, place it in serving bowls, top with meatballs, drizzle with sauce, and add seasonal vegetables.
- Garnish with sesame seeds and chopped scallions. Serve and enjoy!
Notes
To enhance the flavor, you can bake the meatballs at 400°F for 20 minutes instead of searing them. Be careful not to overmix the meatball mixture to keep them tender.
