Description

A nostalgic dish that combines juicy chicken meatballs flavored with ginger and garlic, served over a bed of fragrant rice and fresh vegetables.

Ingredients

Scale
  • 1 lb ground chicken
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 cup panko breadcrumbs
  • 4 cups cooked jasmine or basmati rice
  • 2 cups seasonal vegetables (e.g. broccoli, snap peas, bell peppers)
  • Sesame seeds for garnish
  • Chopped scallions for garnish

Instructions

  1. In a large bowl, combine ground chicken, minced garlic, grated ginger, soy sauce, sesame oil, and panko breadcrumbs. Mix until just incorporated.
  2. With wet hands, form the mixture into small meatballs, about the size of a golf ball.
  3. Heat a large skillet over medium heat, drizzle in sesame oil, and carefully add the meatballs. Sear for 5–7 minutes until golden brown on all sides.
  4. In a small bowl, whisk together soy sauce, honey or maple syrup, and a splash of water. Pour this over meatballs and simmer for an additional 5 minutes.
  5. Fluff the cooked rice, place it in serving bowls, top with meatballs, drizzle with sauce, and add seasonal vegetables.
  6. Garnish with sesame seeds and chopped scallions. Serve and enjoy!

Notes

To enhance the flavor, you can bake the meatballs at 400°F for 20 minutes instead of searing them. Be careful not to overmix the meatball mixture to keep them tender.
