Ingredients

  • 2 large Sweet Potatoes, peeled and cubed
  • 1/4 cup Pure Maple Syrup
  • 1/2 cup Walnuts, roughly chopped
  • 2 tablespoons Olive Oil
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and chop the sweet potatoes into bite-sized cubes.
  3. In a large bowl, toss the sweet potatoes with olive oil, maple syrup, sea salt, and black pepper until coated.
  4. Gently fold in the walnuts.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper and roast for 25-30 minutes, tossing halfway through.
  6. Remove from the oven and let cool for a minute before serving.

Notes

For a vegan twist, substitute agave syrup for maple syrup. Ensure sweet potatoes are not overcrowded on the baking sheet for even roasting.
