- 2 large Sweet Potatoes, peeled and cubed
- 1/4 cup Pure Maple Syrup
- 1/2 cup Walnuts, roughly chopped
- 2 tablespoons Olive Oil
- 1 teaspoon Sea Salt
- 1/2 teaspoon Black Pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and chop the sweet potatoes into bite-sized cubes.
- In a large bowl, toss the sweet potatoes with olive oil, maple syrup, sea salt, and black pepper until coated.
- Gently fold in the walnuts.
- Spread the mixture evenly on a baking sheet lined with parchment paper and roast for 25-30 minutes, tossing halfway through.
- Remove from the oven and let cool for a minute before serving.
Notes
For a vegan twist, substitute agave syrup for maple syrup. Ensure sweet potatoes are not overcrowded on the baking sheet for even roasting.
