Ingredients

  • 1 cup Greek yogurt
  • 2 cloves garlic (minced or 1 tsp garlic powder)
  • 1/4 cup fresh herbs (dill or parsley)
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Optional: Grated carrots, nuts, or chopped cucumbers

Instructions

  1. Wash the cabbage thoroughly, remove the outer leaves, and cut it into quarters. Shred each quarter finely.
  2. In a bowl, combine Greek yogurt, minced garlic, lemon juice, salt, and pepper. Mix until smooth.
  3. Add shredded cabbage to a large bowl and pour the yogurt dressing over it. Toss until evenly coated.
  4. Chop fresh herbs and gently fold them into the salad.
  5. Taste and adjust seasoning with extra salt, pepper, or lemon juice.
  6. Chill in the refrigerator for at least 30 minutes before serving.
