Ingredients

- 1 head of cabbage (green or purple)
- 1 cup Greek yogurt
- 2 cloves garlic (minced or 1 tsp garlic powder)
- 1/4 cup fresh herbs (dill or parsley)
- 2 tbsp lemon juice
- Salt and pepper to taste
- Optional: Grated carrots, nuts, or chopped cucumbers
Instructions
- Wash the cabbage thoroughly, remove the outer leaves, and cut it into quarters. Shred each quarter finely.
- In a bowl, combine Greek yogurt, minced garlic, lemon juice, salt, and pepper. Mix until smooth.
- Add shredded cabbage to a large bowl and pour the yogurt dressing over it. Toss until evenly coated.
- Chop fresh herbs and gently fold them into the salad.
- Taste and adjust seasoning with extra salt, pepper, or lemon juice.
- Chill in the refrigerator for at least 30 minutes before serving.
