Description
Delicious grilled skewers of chicken, bell peppers, and cherry tomatoes, marinated in ranch dressing and topped with Parmesan cheese.

- 1 pound boneless chicken (breast or thighs), cut into chunks
- 1/2 cup ranch dressing
- 3 cloves fresh garlic, minced
- 1/2 cup Parmesan cheese, grated
- 1 bell pepper, cut into bite-sized pieces
- 1 zucchini, cut into bite-sized pieces
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- Fresh herbs (such as parsley or basil), for garnish
Instructions
- Prepare ingredients by washing and chopping vegetables into bite-sized pieces, and cut chicken into similar-sized chunks.
- In a large bowl, combine chicken, ranch dressing, minced garlic, and half of the Parmesan cheese. Marinate for at least 30 minutes.
- Thread the marinated chicken, bell peppers, and cherry tomatoes onto skewers, alternating them for a colorful presentation.
- Preheat grill to medium-high heat. Lightly brush skewers with olive oil and place them on the grill. Cook for 8-10 minutes, turning occasionally, until the chicken is fully cooked and slightly charred.
- In the last minute of grilling, sprinkle remaining grated Parmesan on the skewers and allow it to melt.
- Remove from grill, let cool slightly, and serve with fresh herbs and extra ranch dressing for dipping.
Notes
Soak wooden skewers in water for 30 minutes to prevent burning. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F.
