A delightful blend of crunchy pretzel coating and sweet cherry glaze, perfect for family gatherings and busy weeknights.


Ingredients

  • 4 boneless chicken thighs (or breasts)
  • 1 cup coarsely crushed pretzels
  • 1/2 cup cherry preserves
  • 1/2 cup chicken broth
  • 2 garlic cloves, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse and pat dry the chicken, then season both sides with salt, pepper, and minced garlic.
  3. Set up a dredging station: Pour the crushed pretzels into one bowl and mix the chicken broth with chosen herbs in another.
  4. Coat each piece of chicken by dipping it in the broth mixture, letting excess drip off, then dredging in pretzel crumbs.
  5. Arrange the chicken on the prepared baking sheet and drizzle olive oil over the top.
  6. Bake for about 25-30 minutes until golden brown and cooked through. During the last 5 minutes, brush with cherry glaze.
  7. Let it rest for a few minutes before serving.

Notes

Feel free to use panko breadcrumbs if you can’t find pretzels. Adjust glaze consistency as needed.
