Ingredients

- 4 boneless chicken thighs (or breasts)
- 1 cup coarsely crushed pretzels
- 1/2 cup cherry preserves
- 1/2 cup chicken broth
- 2 garlic cloves, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Rinse and pat dry the chicken, then season both sides with salt, pepper, and minced garlic.
- Set up a dredging station: Pour the crushed pretzels into one bowl and mix the chicken broth with chosen herbs in another.
- Coat each piece of chicken by dipping it in the broth mixture, letting excess drip off, then dredging in pretzel crumbs.
- Arrange the chicken on the prepared baking sheet and drizzle olive oil over the top.
- Bake for about 25-30 minutes until golden brown and cooked through. During the last 5 minutes, brush with cherry glaze.
- Let it rest for a few minutes before serving.
Notes
Feel free to use panko breadcrumbs if you can’t find pretzels. Adjust glaze consistency as needed.
