Ingredients
Scale
- 1 lb Ground Beef
- 8 Flour Tortillas
- 1 cup Pizza Sauce
- 2 cups Mozzarella Cheese, shredded
- 1 tsp Ground Cumin
- 1 tsp Chili Powder
- 1 tsp Oregano
- 1 cup Diced Bell Peppers
- 1/2 cup Diced Onions
- 1/2 cup Salsa
Instructions
- Prep Your Ingredients: Start by chopping your vegetables and gathering all ingredients. Warm a skillet over medium heat and add a splash of olive oil.
- Cook the Beef: Add the ground beef to the skillet and cook until browned. Drain excess fat if necessary. Stir in the spices, diced onions, and bell peppers, cooking until soft.
- Assemble the Enchiladas: Preheat your oven to 350°F (175°C). Take a tortilla and spoon a generous amount of the beef mixture in the center. Drizzle with a spoonful of pizza sauce, sprinkle cheese on top, and roll it up tightly. Place the seam-side down in a baking dish. Repeat for all tortillas.
- Add Sauce and Cheese: Pour additional pizza sauce on top of the arranged enchiladas and add more cheese.
- Bake: Cover the dish with foil and bake for 20 minutes. Then remove the foil and bake for another 10 minutes until cheese is bubbly and brown.
- Serve with Love: Let the enchiladas cool for a few minutes before serving. Top with fresh herbs, sour cream, or avocado slices if desired.
Notes
Substituting ground turkey or plant-based meat can offer healthier options. Avoid overfilling tortillas to prevent spills.
