Description

A delicious fusion of enchiladas and pizza, these Pizza Enchiladas with Ground Beef are a family favorite and perfect for gatherings.

Ingredients

Scale
  • 1 lb Ground Beef
  • 8 Flour Tortillas
  • 1 cup Pizza Sauce
  • 2 cups Mozzarella Cheese, shredded
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • 1 tsp Oregano
  • 1 cup Diced Bell Peppers
  • 1/2 cup Diced Onions
  • 1/2 cup Salsa

Instructions

  1. Prep Your Ingredients: Start by chopping your vegetables and gathering all ingredients. Warm a skillet over medium heat and add a splash of olive oil.
  2. Cook the Beef: Add the ground beef to the skillet and cook until browned. Drain excess fat if necessary. Stir in the spices, diced onions, and bell peppers, cooking until soft.
  3. Assemble the Enchiladas: Preheat your oven to 350°F (175°C). Take a tortilla and spoon a generous amount of the beef mixture in the center. Drizzle with a spoonful of pizza sauce, sprinkle cheese on top, and roll it up tightly. Place the seam-side down in a baking dish. Repeat for all tortillas.
  4. Add Sauce and Cheese: Pour additional pizza sauce on top of the arranged enchiladas and add more cheese.
  5. Bake: Cover the dish with foil and bake for 20 minutes. Then remove the foil and bake for another 10 minutes until cheese is bubbly and brown.
  6. Serve with Love: Let the enchiladas cool for a few minutes before serving. Top with fresh herbs, sour cream, or avocado slices if desired.

Notes

Substituting ground turkey or plant-based meat can offer healthier options. Avoid overfilling tortillas to prevent spills.
