Description

Ingredients

  • 4 cups chicken or vegetable broth
  • 1 cup fresh parsley, chopped
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh mint, chopped
  • 2 cups egg noodles or thin rice noodles
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 cup carrots, chopped
  • 1 cup bell peppers, diced
  • 2 cups spinach
  • 1 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1 pinch saffron
  • 1 lime, juiced

Instructions

  1. In a large pot over medium heat, sauté diced onions until translucent. Add minced garlic and ginger, cooking until fragrant.
  2. Pour in the broth and let it simmer. If using, add saffron to the broth now.
  3. Add the noodles and cook according to package instructions, usually about 4-5 minutes.
  4. When the noodles are nearly done, toss in chopped veggies and let them soften slightly, then add the fresh herbs.
  5. Stir in turmeric, black pepper, and a splash of lime juice to brighten the dish. Taste and adjust seasoning as necessary.
  6. Ladle the soup into bowls and garnish with extra herbs and a lime wedge. Serve with warm flatbreads.

Notes

Avoid overcooking the noodles for the best texture. Fresh herbs should be added at the end for maximum flavor.
