- 4 cups chicken or vegetable broth
- 1 cup fresh parsley, chopped
- 1 cup fresh cilantro, chopped
- 1 cup fresh mint, chopped
- 2 cups egg noodles or thin rice noodles
- 1 onion, diced
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 cup carrots, chopped
- 1 cup bell peppers, diced
- 2 cups spinach
- 1 teaspoon turmeric
- 1/2 teaspoon black pepper
- 1 pinch saffron
- 1 lime, juiced
Instructions
- In a large pot over medium heat, sauté diced onions until translucent. Add minced garlic and ginger, cooking until fragrant.
- Pour in the broth and let it simmer. If using, add saffron to the broth now.
- Add the noodles and cook according to package instructions, usually about 4-5 minutes.
- When the noodles are nearly done, toss in chopped veggies and let them soften slightly, then add the fresh herbs.
- Stir in turmeric, black pepper, and a splash of lime juice to brighten the dish. Taste and adjust seasoning as necessary.
- Ladle the soup into bowls and garnish with extra herbs and a lime wedge. Serve with warm flatbreads.
Notes
Avoid overcooking the noodles for the best texture. Fresh herbs should be added at the end for maximum flavor.
