Description

Delightful Pecan Pie Bars featuring a buttery shortbread crust topped with a rich, nutty pecan filling.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Stir in the flour and salt. Press this mixture evenly into the prepared pan to create a crust.
  4. Bake the crust for about 15 minutes or until lightly golden brown.
  5. While the crust cools, whisk the eggs and combine with corn syrup, brown sugar, vanilla extract, and salt. Stir in chopped pecans.
  6. Once the crust is cool, pour the pecan filling over it and spread evenly.
  7. Return the pan to the oven and bake for an additional 30–35 minutes until the filling is set with a slight jiggle in the center.
  8. Allow to cool completely before cutting into squares or bars.

Notes

For an added twist, consider sprinkling chocolate chips or a dollop of whipped cream over the top before serving.
