- 4 bone-in, skin-on chicken thighs
- 1 cup freshly grated Parmesan cheese
- 1 cup breadcrumbs (plain or Italian)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 cup chicken broth or white wine
- Salt and pepper to taste
- Fresh herbs (thyme or parsley) for garnish
Instructions
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- In a shallow dish, combine Parmesan cheese, breadcrumbs, and Italian herbs.
- Dredge each chicken thigh in the cheese mixture, pressing lightly to adhere.
- Heat olive oil and butter in a skillet over medium-high heat. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and cook for another 5 minutes.
- Remove chicken from the skillet and reduce heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Pour in chicken broth or white wine, scraping up any browned bits. Let it simmer, then add a pat of butter for richness.
- Return the chicken to the skillet, spoon some garlic sauce over each piece, and finish cooking in the oven at 375°F (190°C) for about 15-20 minutes until the internal temperature reaches 165°F.
- Plate the chicken with a drizzle of garlic sauce and garnish with fresh herbs.
Notes
To achieve a crispy crust, avoid crowding the skillet while searing. Let the chicken rest a few minutes before slicing for juiciness.
