Description

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 cup freshly grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup chicken broth or white wine
  • Salt and pepper to taste
  • Fresh herbs (thyme or parsley) for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  2. In a shallow dish, combine Parmesan cheese, breadcrumbs, and Italian herbs.
  3. Dredge each chicken thigh in the cheese mixture, pressing lightly to adhere.
  4. Heat olive oil and butter in a skillet over medium-high heat. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and cook for another 5 minutes.
  5. Remove chicken from the skillet and reduce heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  6. Pour in chicken broth or white wine, scraping up any browned bits. Let it simmer, then add a pat of butter for richness.
  7. Return the chicken to the skillet, spoon some garlic sauce over each piece, and finish cooking in the oven at 375°F (190°C) for about 15-20 minutes until the internal temperature reaches 165°F.
  8. Plate the chicken with a drizzle of garlic sauce and garnish with fresh herbs.

Notes

To achieve a crispy crust, avoid crowding the skillet while searing. Let the chicken rest a few minutes before slicing for juiciness.
