Instructions
- Gather all your ingredients and prep them accordingly.
- In a large skillet, heat olive oil over medium heat and sauté garlic and onion until fragrant.
- Add chicken to the pan, seasoning with salt and spices, and cook until browned.
- Add uncooked rice, stir for one minute, then pour in broth and bring to a gentle boil.
- Incorporate diced bell peppers, cover, and reduce heat to low; simmer for 20-25 minutes until rice is tender.
