  • 1 cup bell peppers (any mix), sliced
  • 1 cup tomatoes (fresh or canned), chopped
  • 1 cup sweet corn
  • 2 cups low-sodium chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil

Instructions

  1. Prepare Ingredients: Finely chop the onion and garlic, and slice the bell peppers. Measure out your spices for easy access while cooking.
  2. Sauté Aromatics: In a large skillet over medium heat, add olive oil and sauté the onions until translucent. Then add the garlic and spices, stirring until fragrant.
  3. Brown the Chicken: Push the aromatics to one side and add the chicken pieces to the skillet. Cook until browned on all sides—this takes about 5-6 minutes.
  4. Add Vegetables and Rice: Stir in the bell peppers, tomatoes, corn, and rice, making sure everything is well combined.
  5. Pour in Broth: Add the chicken broth, bring to a simmer, cover, and reduce heat. Cook for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.
  6. Finish with Freshness: Once cooked, fluff the rice with a fork, stir in chopped cilantro, and squeeze fresh lime juice over the top before serving.

Notes

For variations, you can use brown rice or quinoa instead of white rice or substitute chicken with tofu or shrimp.
