- ½ cup nut butter (peanut or almond)
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup ground nuts (chopped pecans or walnuts)
- 1 cup rolled oats
- Cocoa powder for dusting
Instructions
- In a mixing bowl, combine chocolate chips and nut butter. Microwave in 20-second intervals, stirring until melted and smooth.
- Add honey or maple syrup and vanilla extract to the chocolate mixture, stirring well.
- Gradually mix in ground nuts and rolled oats until you achieve a thick consistency.
- Scoop a tablespoon of the mixture, roll it into a ball, and shape it into a pinecone.
- Roll each truffle in cocoa powder or crushed nuts.
- Place the truffles on a parchment-lined tray and refrigerate for at least 30 minutes.
- Once chilled, serve and enjoy!
Notes
Keep your hands slightly damp while rolling to prevent sticking. Chill the mixture for 10 minutes before shaping for easier handling.
