Description

Delightful No-Bake Pinecone Truffles that capture the cozy essence of autumn with rich chocolate, nuts, and coconut.


Ingredients

Scale
  • 1 cup dark, milk, or white chocolate
  • 1/2 cup walnuts or pecans (or almonds for nut-free)
  • 1/2 cup shredded coconut
  • 1/4 cup honey or maple syrup
  • 2 tbsp butter or coconut oil
  • 1 tsp vanilla extract

Instructions

  1. Melt the chocolate with the butter or coconut oil over low heat until smooth and remove from heat.
  2. In a mixing bowl, combine melted chocolate with nuts, shredded coconut, vanilla extract, and honey/maple syrup; mix well.
  3. Chill the mixture in the refrigerator for about 30 minutes to firm up.
  4. Once firm, roll small spoonfuls into balls and shape them into pinecone shapes.
  5. Roll the shaped truffles in additional shredded coconut for a pinecone appearance.
  6. Place them on a baking sheet lined with parchment paper and chill for at least another hour until set.

Notes
