Description

A rich and creamy cheesecake with the delightful flavors of mocha, perfect for sharing on special occasions.


Ingredients

  • 16 oz cream cheese
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 8 oz dark chocolate, melted
  • 2 tbsp espresso powder or brewed coffee
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, mix crushed graham crackers with melted butter and press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth, then gradually add sugar, sour cream, espresso powder, and vanilla, mixing until well blended.
  4. Add eggs one at a time, being careful not to overmix.
  5. Melt the dark chocolate and fold it gently into the cheesecake batter.
  6. Pour the filling onto the prepared crust and bake for about 60 minutes, until the edges are set but the center has a slight jiggle.
  7. Cool at room temperature and refrigerate for at least 4 hours or overnight before serving.
  8. Remove the springform pan sides and serve, drizzled with extra melted chocolate or whipped cream, if desired.

Notes

For a gluten-free option, substitute graham crackers with gluten-free cookies or nuts.
