- 16 oz cream cheese
- 1 cup sour cream
- 1 cup granulated sugar
- 3 large eggs
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 8 oz dark chocolate, melted
- 2 tbsp espresso powder or brewed coffee
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, mix crushed graham crackers with melted butter and press into the bottom of a springform pan.
- In a large bowl, beat the cream cheese until smooth, then gradually add sugar, sour cream, espresso powder, and vanilla, mixing until well blended.
- Add eggs one at a time, being careful not to overmix.
- Melt the dark chocolate and fold it gently into the cheesecake batter.
- Pour the filling onto the prepared crust and bake for about 60 minutes, until the edges are set but the center has a slight jiggle.
- Cool at room temperature and refrigerate for at least 4 hours or overnight before serving.
- Remove the springform pan sides and serve, drizzled with extra melted chocolate or whipped cream, if desired.
Notes
For a gluten-free option, substitute graham crackers with gluten-free cookies or nuts.
