Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, sauté until translucent.
- Add diced bell peppers and sauté for another 5 minutes.
- Drain and rinse the canned beans, then add them to the pot along with the corn. Stir well.
- Add diced tomatoes and vegetable broth to the pot, scraping the bottom to catch any browned bits.
- Sprinkle in the cumin, chili powder, and smoked paprika, and simmer for about 20 minutes.
- Before serving, stir in fresh cilantro and a squeeze of lime juice.
- Taste and adjust seasoning as desired. Serve in bowls garnished with additional cilantro or avocado slices.
