Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons matcha powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/3 cup milk or dairy-free alternative
  • 1/2 cup white chocolate chips
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, matcha, baking powder, baking soda, sugars, and spices.
  3. In another bowl, combine the pumpkin puree, eggs, and milk, mixing until smooth.
  4. Fold the pumpkin mixture into the dry ingredients until just incorporated.
  5. Gently add in the white chocolate chips.
  6. Fill muffin tins until ¾ full with batter.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Allow to cool for 5 minutes in the tin before transferring to a wire rack.

Notes

For a dairy-free option, substitute milk with a plant-based alternative and eggs with flax eggs. Be careful not to overmix the batter to ensure light muffins.
