- 1 cup all-purpose flour
- 2 tablespoons matcha powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 2 large eggs
- 1/3 cup milk or dairy-free alternative
- 1/2 cup white chocolate chips
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the flour, matcha, baking powder, baking soda, sugars, and spices.
- In another bowl, combine the pumpkin puree, eggs, and milk, mixing until smooth.
- Fold the pumpkin mixture into the dry ingredients until just incorporated.
- Gently add in the white chocolate chips.
- Fill muffin tins until ¾ full with batter.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Allow to cool for 5 minutes in the tin before transferring to a wire rack.
Notes
For a dairy-free option, substitute milk with a plant-based alternative and eggs with flax eggs. Be careful not to overmix the batter to ensure light muffins.
