Instructions
- Melt the butter in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 5 minutes.
- Add the chopped broccoli florets and stir for a few more minutes to allow them to soften.
- Pour in the chicken or vegetable broth, bring to a gentle boil, then reduce the heat and simmer until the broccoli is tender, about 10 minutes.
- Stir in the heavy cream and bring the heat back to medium.
- Add the shredded cheddar cheese, stirring until melted and well incorporated. Season with salt, pepper, and nutmeg to taste.
- For a smoother texture, use an immersion blender to blend the soup to your liking, or leave it chunky for a rustic feel.
- Serve hot, garnished with additional cheese, sautéed mushrooms, or crispy bacon if desired.
