Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 5 minutes.
  2. Add the chopped broccoli florets and stir for a few more minutes to allow them to soften.
  3. Pour in the chicken or vegetable broth, bring to a gentle boil, then reduce the heat and simmer until the broccoli is tender, about 10 minutes.
  4. Stir in the heavy cream and bring the heat back to medium.
  5. Add the shredded cheddar cheese, stirring until melted and well incorporated. Season with salt, pepper, and nutmeg to taste.
