Ingredients

- 8 oz pasta (whole grain or gluten-free)
- 2 cups fresh broccoli florets
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- Zest and juice of 1 lemon
- 1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Reserve a bit of pasta water.
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
- Add the broccoli florets and a pinch of salt, cooking until bright green and tender-crisp.
- Drain the pasta and add it to the skillet with the broccoli and garlic; toss to coat, adding reserved pasta water as needed.
- Stir in lemon juice, zest, and Parmesan cheese. Season with salt and pepper to taste.
- Serve warm, garnishing with extra cheese and fresh herbs as desired.
Notes
This pasta can be easily customized by adding proteins like grilled chicken or shrimp, or using spinach/kale instead of broccoli.
