Description

Ingredients

  • 2 cups fresh broccoli florets
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Zest and juice of 1 lemon
  • 1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve a bit of pasta water.
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
  3. Add the broccoli florets and a pinch of salt, cooking until bright green and tender-crisp.
  4. Drain the pasta and add it to the skillet with the broccoli and garlic; toss to coat, adding reserved pasta water as needed.
  5. Stir in lemon juice, zest, and Parmesan cheese. Season with salt and pepper to taste.
  6. Serve warm, garnishing with extra cheese and fresh herbs as desired.
