Description

A refreshing Italian Grinder Salad that balances crisp produce and savory meats, perfect for summer gatherings.


Ingredients

  • 1 head of Romaine Lettuce, chopped
  • 200g Salami, sliced
  • 100g Ham or Turkey, sliced
  • 150g Provolone Cheese, cubed
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Pepperoncini Peppers, sliced
  • 1/2 cup Black Olives, sliced
  • Fresh Basil and Parsley, chopped
  • 1/4 cup Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • Salt and Pepper to taste

Instructions

  1. Wash and chop the Romaine Lettuce into bite-sized pieces and place it in a large bowl.
  2. Slice the salami, ham, and cherry tomatoes, then add them to the bowl with the lettuce.
  3. Cube the provolone cheese and slice the pepperoncini, tossing these into the salad.
  4. Add the sliced black olives and finely chopped fresh herbs; mix gently to combine.
  5. In a small bowl, whisk together olive oil and red wine vinegar with salt and pepper to taste. Pour over the salad and toss until well coated.
  6. Let the salad sit for about 10 minutes before serving to enhance the flavors.

Notes

For a vegetarian twist, consider adding chickpeas or tofu instead of meat. Drape extra dressing on the side for guests to adjust their portions.
