- 2–3 lbs chuck roast
- 1 large sweet onion, diced
- 4 cloves garlic, minced
- 1 cup barbecue sauce
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1 tsp salt
- 6–8 buttered hamburger buns
- Optional toppings: pickles, coleslaw, sliced jalapeños
Instructions
- Trim excess fat from the chuck roast and pat dry. Season generously with salt and pepper.
- In a heavy skillet, heat oil over medium-high heat. Sear the beef on all sides until browned.
- Transfer beef to a slow cooker. Sauté diced onions and minced garlic in the skillet until tender, about 5-7 minutes. Add to the slow cooker.
- Mix barbecue sauce with spices and pour over the beef, ensuring it’s well-coated.
- Slow cook on low for 8 hours or high for about 4 hours until the beef shreds easily.
- Once cooked, use two forks to shred the beef, mix it with the sauce, and adjust the seasoning if necessary.
- Spoon the beef onto toasted buns and garnish with toppings of your choice.
