Ingredients

  • 68 cups mixed apples (Granny Smith, Honeycrisp, Fuji)
  • 3/4 cup granulated sugar (or brown sugar)
  • 2 ½ cups all-purpose flour
  • 1 cup cold unsalted butter, cubed
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • Egg wash (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and slice apples, toss with sugar, cinnamon, nutmeg, and lemon juice. Rest while making the crust.
  3. In a bowl, mix flour and salt. Cut in butter until crumbly. Add ice-cold water until dough holds together.
  4. Divide dough, wrap in plastic, and chill for at least an hour. Roll out one disk into a circle for pie pan.
  5. Pour apple filling into crust, dot with butter, roll out top crust, and seal edges.
  6. Brush with egg wash and bake for 15 minutes, then lower to 350°F (175°C) for another 30–40 minutes.
  7. Cool before serving with whipped cream or ice cream.

Notes

Use a mix of apple varieties for a better filling. Chill your dough and butter for flaky crust. Allow pie to cool before cutting to set the filling.
