- 1 pound boneless chicken thighs
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups mashed potatoes
- 1 cup corn (fresh, frozen, or canned)
- 1 cup gravy (store-bought or homemade)
- Butter for sautéing
Instructions
- Marinate the chicken in buttermilk for at least one hour.
- Dredge marinated chicken in the flour and cornmeal mixture.
- Heat oil in a deep skillet to 350°F and fry the chicken for 6-8 minutes on each side.
- Boil and mash the potatoes with butter, cream, salt, and pepper.
- Sauté corn in butter for about 5 minutes until heated through.
- Assemble the bowls by starting with mashed potatoes, topping with chicken, corn, and gravy.
- Sprinkle with parsley or green onions before serving.
Notes
For a lighter version, use whole grain flour and serve with a side salad or steamed veggies.
