Ingredients

  • 1 pound boneless chicken thighs
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups mashed potatoes
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup gravy (store-bought or homemade)
  • Butter for sautéing

Instructions

  1. Marinate the chicken in buttermilk for at least one hour.
  2. Dredge marinated chicken in the flour and cornmeal mixture.
  3. Heat oil in a deep skillet to 350°F and fry the chicken for 6-8 minutes on each side.
  4. Boil and mash the potatoes with butter, cream, salt, and pepper.
  5. Sauté corn in butter for about 5 minutes until heated through.
  6. Assemble the bowls by starting with mashed potatoes, topping with chicken, corn, and gravy.
  7. Sprinkle with parsley or green onions before serving.

Notes

For a lighter version, use whole grain flour and serve with a side salad or steamed veggies.
