Description

A comforting and filling soup made with lentils, potatoes, and aromatic herbs, perfect for chilly evenings.


Ingredients

  • 1 cup green or brown lentils
  • 2 medium potatoes (Yukon gold or russet), diced
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 6 cups vegetable or chicken broth
  • 2 teaspoons olive oil
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Chop your onion, garlic, carrots, and celery.
  2. In a large pot, heat olive oil over medium heat. Sauté the onions until translucent (about 5 minutes).
  3. Add garlic and sauté for another 30 seconds until fragrant.
  4. Stir in carrots and celery; sauté for 5 more minutes.
  5. Add lentils and diced potatoes to the pot and stir gently.
  6. Pour in the broth to cover the ingredients. Optionally, add a splash of white wine.
  7. Incorporate thyme, bay leaves, and season with salt and pepper. Bring to a gentle boil.
  8. Reduce to a simmer and cook for 25-30 minutes, until lentils are tender.
  9. Taste and adjust seasoning as needed. Optionally, blend a portion for a creamier texture.
  10. Ladle soup into bowls and garnish with fresh herbs or a sprinkle of smoked paprika.

Notes

Lentils absorb liquid; add more broth if needed. Optionally enhance flavor with smoked paprika or cumin.
