- 1 cup green or brown lentils
- 2 medium potatoes (Yukon gold or russet), diced
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 6 cups vegetable or chicken broth
- 2 teaspoons olive oil
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Chop your onion, garlic, carrots, and celery.
- In a large pot, heat olive oil over medium heat. Sauté the onions until translucent (about 5 minutes).
- Add garlic and sauté for another 30 seconds until fragrant.
- Stir in carrots and celery; sauté for 5 more minutes.
- Add lentils and diced potatoes to the pot and stir gently.
- Pour in the broth to cover the ingredients. Optionally, add a splash of white wine.
- Incorporate thyme, bay leaves, and season with salt and pepper. Bring to a gentle boil.
- Reduce to a simmer and cook for 25-30 minutes, until lentils are tender.
- Taste and adjust seasoning as needed. Optionally, blend a portion for a creamier texture.
- Ladle soup into bowls and garnish with fresh herbs or a sprinkle of smoked paprika.
Notes
Lentils absorb liquid; add more broth if needed. Optionally enhance flavor with smoked paprika or cumin.
