Guinness Beef Stew

Description

A hearty and comforting stew enriched with the deep flavors of Guinness stout, tender beef, and earthy vegetables.


Ingredients

  • 2 lbs chuck roast or stewing beef, cut into chunks
  • 1 bottle (12 oz) Guinness stout
  • 2 medium onions, chopped
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 4 cups beef stock
  • 1 tablespoon flour
  • Salt and pepper to taste
  • Oil for searing

Instructions

  1. Heat oil in a large Dutch oven over medium-high heat. Sear beef in batches until browned, then remove.
  2. Sauté onions in the same pot until translucent, then add garlic and cook until fragrant.
  3. Pour in the Guinness, deglazing the pot by scraping up the browned bits.
  4. Return the beef to the pot and add carrots, potatoes, thyme, and beef stock. Bring to a simmer.
  5. Cover and reduce heat to low, cooking for 2-3 hours until the beef is fork-tender.
  6. If desired, mix flour with water and stir into the stew for thickening during the last 30 minutes.
  7. Season with salt and pepper before serving warm with bread or mashed potatoes.

Notes

Allowing the stew to rest after cooking deepens the flavor.
