A hearty and comforting stew enriched with the deep flavors of Guinness stout, tender beef, and earthy vegetables.
Ingredients

- 2 lbs chuck roast or stewing beef, cut into chunks
- 1 bottle (12 oz) Guinness stout
- 2 medium onions, chopped
- 4 carrots, chopped
- 4 potatoes, diced
- 4 cloves garlic, minced
- 2 sprigs fresh thyme
- 4 cups beef stock
- 1 tablespoon flour
- Salt and pepper to taste
- Oil for searing
Instructions
- Heat oil in a large Dutch oven over medium-high heat. Sear beef in batches until browned, then remove.
- Sauté onions in the same pot until translucent, then add garlic and cook until fragrant.
- Pour in the Guinness, deglazing the pot by scraping up the browned bits.
- Return the beef to the pot and add carrots, potatoes, thyme, and beef stock. Bring to a simmer.
- Cover and reduce heat to low, cooking for 2-3 hours until the beef is fork-tender.
- If desired, mix flour with water and stir into the stew for thickening during the last 30 minutes.
- Season with salt and pepper before serving warm with bread or mashed potatoes.
Notes
Allowing the stew to rest after cooking deepens the flavor.
