Ingredients

  • Short pasta (fusilli or penne)
  • 1 cup fresh herbs (basil, dill, parsley)
  • Juice of 1 lemon
  • 1/2 cup Greek yogurt or buttermilk
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • Cucumbers, diced
  • Bell peppers, diced
  • Cherry tomatoes (optional)
  • Olives (optional)

Instructions

  1. Boil water in a large pot and cook pasta until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a blender, combine fresh herbs, creamy ingredient, lemon juice, garlic, and olive oil. Blend until smooth.
  3. Chop cucumbers, bell peppers, and other vegetables uniformly.
  4. In a large bowl, toss pasta with veggies, then gradually add the dressing until well coated.
  5. Chill in the fridge for at least 30 minutes before serving.
