Ingredients

- Short pasta (fusilli or penne)
- 1 cup fresh herbs (basil, dill, parsley)
- Juice of 1 lemon
- 1/2 cup Greek yogurt or buttermilk
- 1/4 cup olive oil
- 1 clove garlic, minced
- Cucumbers, diced
- Bell peppers, diced
- Cherry tomatoes (optional)
- Olives (optional)
Instructions
- Boil water in a large pot and cook pasta until al dente, about 8-10 minutes. Drain and rinse under cold water.
- In a blender, combine fresh herbs, creamy ingredient, lemon juice, garlic, and olive oil. Blend until smooth.
- Chop cucumbers, bell peppers, and other vegetables uniformly.
- In a large bowl, toss pasta with veggies, then gradually add the dressing until well coated.
- Chill in the fridge for at least 30 minutes before serving.
