- 1 lb large shrimp, peeled and deveined
- 1 cup jasmine rice
- 4 cloves garlic, minced
- 3 tbsp unsalted butter
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the jasmine rice according to package instructions.
- In a large skillet over medium heat, melt the butter and sauté the minced garlic until golden, about 1-2 minutes.
- Add the shrimp, season with salt and pepper, and sauté until pink and opaque, about 3-5 minutes.
- In a mixing bowl, combine the cooked rice, shrimp and garlic mixture, lemon juice, and half the parsley.
- Preheat the oven to 375°F (190°C), transfer the mixture to a greased baking dish, and top with the remaining parsley.
- Bake for about 20 minutes until golden and slightly crispy on top.
- Let it cool for a few minutes before serving, optionally with lemon wedges.
Notes
For a crispy top, consider broiling for the last few minutes. Avoid overcooking the shrimp to maintain their texture.
