Description

A comforting and flavorful dish combining succulent shrimp, garlic, and jasmine rice baked to perfection.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup jasmine rice
  • 4 cloves garlic, minced
  • 3 tbsp unsalted butter
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the jasmine rice according to package instructions.
  2. In a large skillet over medium heat, melt the butter and sauté the minced garlic until golden, about 1-2 minutes.
  3. Add the shrimp, season with salt and pepper, and sauté until pink and opaque, about 3-5 minutes.
  4. In a mixing bowl, combine the cooked rice, shrimp and garlic mixture, lemon juice, and half the parsley.
  5. Preheat the oven to 375°F (190°C), transfer the mixture to a greased baking dish, and top with the remaining parsley.
  6. Bake for about 20 minutes until golden and slightly crispy on top.
  7. Let it cool for a few minutes before serving, optionally with lemon wedges.

Notes

For a crispy top, consider broiling for the last few minutes. Avoid overcooking the shrimp to maintain their texture.
