Description

Delightful muffins that blend traditional Southern cornbread flavors with colorful sprinkles, creating a joyful treat perfect for any occasion.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tbsp baking powder
  • 1/2 cup granulated sugar
  • 1 cup buttermilk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup rainbow sprinkles (plus extra for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.
  2. In a large bowl, mix together the cornmeal, all-purpose flour, sugar, and baking powder until combined.
  3. In another bowl, whisk the buttermilk, eggs, and melted butter until blended smoothly.
  4. Pour the wet mixture into the dry ingredients. Gently fold until just combined, careful not to over-mix.
  5. Stir in the rainbow sprinkles, reserving a handful for the tops of the muffins.
  6. Spoon the batter into each muffin cup, filling them about two-thirds full, and top with reserved sprinkles.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove from the oven and allow to cool in the pan for a few minutes before transferring to a wire rack.

Notes

Brush a bit of melted butter on top right when they come out of the oven for extra flavor.
