- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tbsp baking powder
- 1/2 cup granulated sugar
- 1 cup buttermilk
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup rainbow sprinkles (plus extra for topping)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.
- In a large bowl, mix together the cornmeal, all-purpose flour, sugar, and baking powder until combined.
- In another bowl, whisk the buttermilk, eggs, and melted butter until blended smoothly.
- Pour the wet mixture into the dry ingredients. Gently fold until just combined, careful not to over-mix.
- Stir in the rainbow sprinkles, reserving a handful for the tops of the muffins.
- Spoon the batter into each muffin cup, filling them about two-thirds full, and top with reserved sprinkles.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and allow to cool in the pan for a few minutes before transferring to a wire rack.
Notes
Brush a bit of melted butter on top right when they come out of the oven for extra flavor.
