- 1 lb ground turkey
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 cans diced tomatoes, preferably fire-roasted
- 1 can black or pinto beans, drained and rinsed
- 1 cup corn, fresh or frozen
- 1 bell pepper, diced
- 4 cups chicken or vegetable broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Sour cream or shredded cheese, optional for serving
- Lime wedges, for garnish
Instructions
- In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
- Push the onions to one side of the pot and add the ground turkey. Season with salt and let it brown, mixing with the onions, for about 6–8 minutes.
- Add the chili powder and cumin to the turkey mixture, stirring for one minute. Then, add the diced tomatoes, beans, corn, bell pepper, and broth, mixing everything well.
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 20-30 minutes to let the flavors meld.
- Before serving, taste the soup and adjust the seasoning as needed. Serve hot, garnished with fresh cilantro, sour cream, or cheese, with lime wedges on the side.
