- 2 cups fresh corn kernels
- 4–6 strips bacon
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup all-purpose flour
- 2 eggs
- 1 tablespoon baking powder
- Salt and pepper, to taste
- Oil for frying (peanut or vegetable)
Instructions
- Crisp the bacon in a skillet over medium heat, then drain on paper towels, reserving some grease.
- In a bowl, mix flour, baking powder, salt, and pepper. In another bowl, combine beaten eggs, bacon, corn, and cheese, then mix with the dry ingredients.
- Heat oil in a deep pot to around 350°F (175°C).
- Drop spoonfuls of batter into the hot oil, frying for about 2-3 minutes on each side until golden brown.
- Drain on paper towels. Serve warm with your favorite dipping sauce.
Notes
Keep the batter slightly lumpy for better texture in fritters. Ensure oil is hot enough to avoid greasy fritters.
