A delightful marriage of flavors, combining tender turkey fillets with a crunchy herb crust and tangy cranberry sauce.


Ingredients

  • 4 boneless turkey fillets
  • 1 cup fresh breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups fresh or frozen cranberries
  • 1/2 cup sugar
  • Zest of 1 orange
  • Salt and pepper, to taste
  • Olive oil or cooking spray, for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the turkey fillets dry and season with salt and pepper.
  3. In a bowl, combine breadcrumbs, parsley, thyme, garlic powder, onion powder, and Parmesan cheese.
  4. Coat each turkey fillet with the breadcrumb mixture, pressing to adhere.
  5. Arrange on a greased baking sheet and bake for 20-25 minutes, or until cooked through and golden.
  6. Meanwhile, in a saucepan, combine cranberries, sugar, and a splash of water. Simmer over medium heat until cranberries burst.
  7. Remove from heat and stir in orange zest. Allow to cool.
  8. Serve turkey fillets drizzled with cranberry sauce.

Notes

For a twist, try adding crushed red pepper flakes to the breadcrumb mix. Allow turkey to rest before serving for juiciness.
