- 4 boneless turkey fillets
- 1 cup fresh breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups fresh or frozen cranberries
- 1/2 cup sugar
- Zest of 1 orange
- Salt and pepper, to taste
- Olive oil or cooking spray, for greasing
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the turkey fillets dry and season with salt and pepper.
- In a bowl, combine breadcrumbs, parsley, thyme, garlic powder, onion powder, and Parmesan cheese.
- Coat each turkey fillet with the breadcrumb mixture, pressing to adhere.
- Arrange on a greased baking sheet and bake for 20-25 minutes, or until cooked through and golden.
- Meanwhile, in a saucepan, combine cranberries, sugar, and a splash of water. Simmer over medium heat until cranberries burst.
- Remove from heat and stir in orange zest. Allow to cool.
- Serve turkey fillets drizzled with cranberry sauce.
Notes
For a twist, try adding crushed red pepper flakes to the breadcrumb mix. Allow turkey to rest before serving for juiciness.
