Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a muffin tin with cooking spray or olive oil.
  3. Press each tortilla into the muffin cups, shaping them into cups.
  4. Bake for about 10 minutes or until golden brown.
  5. Sauté the vegetables in a skillet with oil, garlic, and spices until softened.

  7. Fill each tortilla cup with the sautéed vegetables, then pour the egg mixture on top.
