- 1 cup sun-dried tomatoes (packed in oil)
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced (cremini or button)
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh herbs (basil, thyme, or parsley) for garnish
Instructions
- Boil the Pasta: Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- Sauté Aromatics: In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add Mushrooms and Sun-Dried Tomatoes: Stir in sliced mushrooms and sun-dried tomatoes, sautéing until tender, about 5 minutes.
- Pour in the Cream: Reduce heat to low, stir in heavy cream, and allow to simmer for a few minutes until slightly thickened.
- Mix in Cheese and Herbs: Add grated Parmesan and desired herbs, stirring until the cheese melts into the sauce.
- Combine with Pasta: Add drained pasta to the skillet, tossing to coat in the sauce. If too thick, add reserved pasta water as needed.
- Serve and Enjoy: Plate the pasta, garnish with additional Parmesan and fresh herbs, and serve immediately.
Notes
For a healthier version, consider whole-grain pasta or add spinach or broccoli.
