Description

A delightful dish combining creamy orzo with fresh spinach and parmesan, perfect for family gatherings or a cozy dinner.

Ingredients

Scale
  • 1 cup orzo
  • 45 cups fresh spinach
  • 1 cup freshly grated parmesan cheese
  • 23 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Vegetable or chicken broth (for cooking orzo)

Instructions

  1. Boil salted water and cook the orzo according to package directions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the spinach and stir until it wilts down, about 2 minutes.
  4. Combine the cooked orzo into the skillet with the spinach mixture. Pour in the heavy cream and stir gently until well-coated.
  5. Sprinkle in the parmesan cheese and season with salt and pepper. Cook on low heat for an additional 2-3 minutes until heated through.
  6. Serve garnished with more parmesan and freshly chopped herbs if desired.

Notes

For lighter versions, consider using half-and-half instead of heavy cream. Feel free to experiment with different leafy greens or cheeses.
