- 1 cup orzo
- 4–5 cups fresh spinach
- 1 cup freshly grated parmesan cheese
- 2–3 cloves garlic, minced
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Vegetable or chicken broth (for cooking orzo)
Instructions
- Boil salted water and cook the orzo according to package directions until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add the spinach and stir until it wilts down, about 2 minutes.
- Combine the cooked orzo into the skillet with the spinach mixture. Pour in the heavy cream and stir gently until well-coated.
- Sprinkle in the parmesan cheese and season with salt and pepper. Cook on low heat for an additional 2-3 minutes until heated through.
- Serve garnished with more parmesan and freshly chopped herbs if desired.
Notes
For lighter versions, consider using half-and-half instead of heavy cream. Feel free to experiment with different leafy greens or cheeses.
