Instructions

  1. Prepare the Ingredients: Peel and dice sweet potatoes into bite-sized cubes. Mince garlic and slice mushrooms if using.
  2. Sauté the Vegetables: In a large skillet, melt butter over medium heat. Add minced garlic and sauté for about a minute until fragrant. Add sweet potatoes and cook for 6-8 minutes, stirring occasionally, until they start to soften.
  3. Add the Mushrooms: Toss in sliced mushrooms and brown slightly, stirring to coat all ingredients.
  4. Cook the Tortellini: Pour in vegetable broth and bring to a gentle boil. Add tortellini and simmer for 3-5 minutes or until cooked through.
  5. Mix in Cream and Spinach: Reduce heat to low, stir in cream, and add spinach. Cook until just wilted. Season with salt and freshly cracked pepper.
