- 2 medium sweet potatoes, peeled and diced
- 2 cups fresh spinach

- 1 cup heavy cream
- 1 cup vegetable broth

- 1 cup mushrooms (optional, sliced)

Instructions
- Prepare the Ingredients: Peel and dice sweet potatoes into bite-sized cubes. Mince garlic and slice mushrooms if using.
- Sauté the Vegetables: In a large skillet, melt butter over medium heat. Add minced garlic and sauté for about a minute until fragrant. Add sweet potatoes and cook for 6-8 minutes, stirring occasionally, until they start to soften.
- Add the Mushrooms: Toss in sliced mushrooms and brown slightly, stirring to coat all ingredients.
- Cook the Tortellini: Pour in vegetable broth and bring to a gentle boil. Add tortellini and simmer for 3-5 minutes or until cooked through.
- Mix in Cream and Spinach: Reduce heat to low, stir in cream, and add spinach. Cook until just wilted. Season with salt and freshly cracked pepper.
- Finishing Touches: Remove from heat, sprinkle with Parmesan cheese, and let it melt before serving.
- Serve with Love: Plate the dish, adding more Parmesan on top and serving it with garlic bread or a fresh mixed greens salad.
Notes
For a vegan option, substitute heavy cream with coconut milk and Parmesan with nutritional yeast. You can also modify vegetables based on preference.
